The ripest apples are selected and harvested by hand for our Gumption® ciders.
We unleash the full apple awesomeness by running the apples through a cider press.
The amazing apple juice then travels to fermentation tanks where champagne yeast is added to create the alcohol, while preserving the apple profile in the juice.
After 7 days of fermentation at 75˚F, the cider is cooled to 40˚F and run through a state-of-the-art modern filter to remove yeast and any remaining solids.
Then, our genius Cider Makers really get down to business. The art of the process is the blend. Blends are crafted in 11,000 gallon batches and each cider style follows a meticulously tested recipe. For many of our innovative Late Show styles, the cider is then run through an extraction tank containing raw natural ingredients such as ginger, chocolate, spices, or other ingredients we want to infuse into the cider. Innovation at its finest.
Our Gumption® ciders are then carbonated, bottled, pasteurized, packed and shipped to distributors throughout the US for you to enjoy.
